Papa’s Pilar rum is inspired by Ernest Hemingway – his adventures, the literary journeys he evoked in us all and his conservational efforts, many of which went unknown. Pilar was the boat that Hemingway often used to sail across the Caribbean. Gaining more than international wind in its sails, Pilar curated the travel necessary to deliver the literary momentum the American writing scene was so desperate for.
The adventures that Hemingway and Pilar experienced have been captured and crafted into a premium sipping rum. It’s to be enjoyed by those who live by a similar creed and to enhance one’s own adventure. Sourced from hand-selected rums spanning the Caribbean, U.S. and Central America, our artisan-crafted spirit is solera aged and blended in American Oak barrels, Port Wine casks and finished in Spanish Sherry casks. It boasts a complex and bold flavor profile and exceptionally long finish making it the “Best New Rum of the year” by the Caribbean Journal and “Double Gold” recipient by ‘The World Spirits Competition and ‘The Fifty Best.’
The Hemingway Family donates 100% of their royalty profits from Papa’s Pilar Rum back to organizations that embody the likes of adventure, literacy, conservation and more – areas that were meaningful to Hemingway and his heirs. On the heels of that, the Pilar family is dedicated to preservation and works with local organizations and charities whenever possible, to help raise awareness or funds (or both) while sharing our brand story and award-winning spirit.
The dark rum is 24-year-old and a beautiful, dark amber color. It’s sweet, mixed with earthy, vegetal tones. With hints of spice, bourbon, almonds and apricot it coats the mouth, and then leads into a robust, exotic and full-bodied finish. The nose has complex notes of vanilla, cinnamon, dark Italian roast coffee and honey with hints of sherry and port.
